When you’re on the run, trying to get on with your day but you need a quick ‘pick me upper’ to hold you over til you can get a real meal… Grab an Energy Ball! (or two)
These easy to make energy balls are loaded with healthy carbs and proteins that will hold you til your next breather! And you don’t have to turn on your oven! No cooking required! Just throw some oats, chocolate chips, dried fruit of choice, coconut flakes, maybe some chia or flax seeds and of course some peanut butter into a bowl and mix!
Not only are these easy, they’re versatile based on what you have in your pantry at the time. Don’t have chia seeds but do have flax seeds? Don’t have dried cranberries but do have dried cherries? How about throwing in some chopped nuts of choice? It’s easy to make it to your own taste.
You can also keep this Vegan friendly by using blue agave instead of honey! I’ve found that to be just as delicious!
Here’s how I make it.
No Bake Chocolate Chip Peanut Butter Energy Balls
In a medium size mixing bowl, add oatmeal, coconut flakes, mini chocolate chips, chia seeds, dried cranberries and peanut butter. Drizzle the honey over the top.
I really like using mini chocolate chips for energy balls since they get distributed more evenly within each one.
Mix together thoroughly so everything is distributed evenly throughout. Cover with plastic wrap and refrigerate 30 minutes. This will help the balls roll our easier without as much sticky mess!
Can’t wait 30 minutes? Rub some cooking oil on your hands and go to town making these energy balls!
Roll into balls. This will make 20 energy balls of about 1 1/4″ in diameter. Just to keep things simple and uniform, I love using my handy dandy small scooper to dig out the right amount every time, then roll in a ball with my hands. Just saying…
Kids love these and will make them disappear before you can get them all rolled up. Better double the recipe!
Store uneaten energy balls in the refrigerator.
