Coconut Lime Rice

I just can’t get enough of this rice dish!  It is a beautiful combination of your favorite rice, cooked in  coconut milk, lime zest and chopped fresh cilantro leaves.  You can use jasmine, basmati or regular long grain white rice, just go by whatever you have in your pantry at the time you want to make this delicious dish!  This is so simple to do because it’s cooked in your rice maker/steamer.  Dump it together, set the timer and walk away til the bell rings.

Now, let’s take it over the top and create a true meal in a bowl.  How about we add a spectacular Pan Seared Indian Chicken Breast all sliced up and layered on top?  Wanna go a step further?  Let’s add a helping of sauteed fresh kale!!!  My oh My, I’m telling you this is to die for!  And you know what?  It’s quite the healthy meal ta boot!

Want another idea?  How about serving some fantastic Mojo Pork on top of this Coconut Lime Rice?  I’m here to tell you it’s another perfect marriage of flavors that will have you making these dishes over and over.  Did I mention that the Mojo Pork is a slow cooker dish?  Truly one of those recipes that you dump it in the slow cooker, set on Low and walk away for 8 hours.

Here’s how I make it.

In the rice bowl of your rice cooker/steamer, add the rice, lime zest, chopped fresh cilantro leaves and salt.  Reserve the lime juice for later.

Let’s talk a little about the coconut milk.  Now days, coconut milk is available in both cans and in the refrigerator section in half gallon cartons.  I’ve used both and they both work well.  You will notice one difference though.  The can will typically have a thin layer of coconut cream that has solidified.  I call that richness!  Just break it up a bit with a spoon to make it easier to pour.

Pour the coconut milk over the rice, lime zest, cilantro and salt.

Stir it around a bit, cover with the lid, set the timer according to your rice steamer directions and walk away!  Just a note here… I set my rice steamer to 55 minutes.

You remember the lime zest you used in the beginning?  Cut that lime in half and squeeze the juice over the cooked rice and fluff with a fork.  It just adds a nice refreshing flavor to the rice.  I love it!

Coconut Lime Rice

Ingredients

  • 1 cup uncooked jasmine, basmati or long grain white rice
  • 1 lime, zest and juice
  • 1/2 cup cilantro leaves, chopped
  • pinch of salt
  • 1 2/3 cup or 13.5 ounce can of coconut milk

Instructions

  1. In the rice bowl of your rice cooker/steamer, add the rice, lime zest, chopped fresh cilantro leaves and salt. Reserve the lime juice for later.
  2. Pour the coconut milk over the rice mixture, stir, cover with the lid, set the timer according to your rice steamer directions and walk away! Just a note here... I set my rice steamer to 55 minutes.
  3. Cut the lime that you zested in half and squeeze the juice over the cooked rice and fluff with a fork.
